Ever-changing Veggie
Nachos

Who said nachos are junk food? There are so many options for chips these days. Bean chips for more protein, cassava chips for corn free, Forager chips for greens and amaranth! Then load those bad boys up with beans or lentils, veggies, cheese or no cheese, but DEFINITELY guacamole! This is how my family likes to nacho.

Ingredients

Organic corn Tortilla chips/Beanitos/Grain Free Tortilla Chips/Forager Leafy Green Chips
White/Black/Pinto Beans
Cheddar cheese/miyoko's mozzarella cheese

Topping ideas cut into small bite sized pieces:
Cucumber  
Spinach/romaine
Peppers
Olives
Tomato
Avocado
Salsa
Guacamole
Hot sauce  

Recipe

Preheat oven to 350ºF
Pour chosen chips onto rimmed baking sheet
Sprinkle chosen beans evenly over the chips
Sprinkle cheese evenly over beans/chips  
Bake chips for 7-10 min. *Every chip and cheese bakes a bit differently so keep your eye on it for ideal melt/crisp desired.

Place chips onto a serving plate or bowl and either sprinkle the toppings all across or leave toppings in separate bowls for guests to decide which they prefer.
